Made with highly illegal methods in the United States, this beloved washed-rind cheese pays homage to one of Napoleon’s favorites - Époisses de Bourgogne. As it ages over a period of 5-6 weeks in an abandoned mill, the exterior rind will become a reddish-orange and the interior paste will change from smooth and creamy to a gooey, thick, spoonable texture with hints of a dirty Carhart beanie. Pairs well with Cabernet Sauvignon, Chardonnay, Belgian Dark Ale and India Pale Ale.
